3 large heads of garlic
1/2 cup virgin olive oil
3 15oz cans cannellini beans, rinsed and well drained.
1 1/2 tbsp red wine vinegar
1/4 tsp salt
1/8 tsp coursely ground black pepper
1 tsp dried rosemary or 1 tbsp finely chopped fresh rosemary leaves
1 tsp dried thyme or 1 tbsp finely chopped fresh thyme leaves
1 1/2 tbsp chopped fresh parsley

Preheat oven to 400 degrees. Break each head of garlic into cloves. Smash cloves lightly to loosen the papery skins. Remove skins. Place garlic cloves in a medium oven proof baking dish. Pour olive oil over garlic. Cover pan with double thickness of aluminuim foil. Bake garlic for 20 to 25 minutes or until light golden brown. Remove garlic from oil with a slotted spoon. Set aside to drain. Keep the oil.
Place drained beans in a large glass bowl (do not use metal). Add cooked garlic and toss well. Put wine vinegar, salt, pepper, and 5 tbsp of the oil from cooking the garlic in a small glass bowl. Whisk together. Pour over beans. Add rosemary, thyme and parsley. Toss well. Salad is best if made at least 2 to 3 hours in advance and refrigerated. It can be served cold or at room temprature

Cannellini beans with garlic and herbs, makes a delicious salad or light lunch served with garlic bread. (canned great northern beans can be substituted for cannellini beans)
