6 Tbsp butter
6 Tbsp Flour
1 cup chicken broth
1 cup heavy cream
1 Tbsp sherry or dry white wind
1 tsp white pepper
Salt to taste

Directions:
Directions:
Melt butter over medium heat. Remove from heat, blend in flour and return to heat. Stir and cook about 2 minutes, do not allow to brown. Gradually stir in broth, reduce heat to simmer, stirring constantly until thick. Blend in cream, then sherry or wine. Salt to taste
