4 large or 6 medium eggs..beaten
1 tablespoon milk
1 medium onion..shredded
4 large potatoes...peeled and shredded
salt and pepper to taste
1/2 cup oil

Optional.....cooked, crumbled bacon or sausage, cooked, diced ham

Directions:
Directions:
Heat 1/4 cup of the oil in skillet over medium heat..
Stir the milk into the beaten eggs..add salt, pepper, potatoes, onions and optional ingredient { if using }..drop by ladlesfull into hot oil..saute until golden on each side.
I like mine plain or with butter..my kids use ketchup or syrup on them.
