8 oz. sliced mushrooms- chopped fine
3 tbsp. butter
1/2 small onion - diced
3 tbsp. flour
1 141/2 oz. can chicken broth
8 oz. cream - light or medium
pepper to taste

Directions:
Directions:
Saute mushrooms and onions in butter for 3-4 min. Add flour. Cook additional 3 min. Add chicken broth and simmer covered about 10 min. Turn heat off and blend in pot with stick blender or whisk. Add cream - start with 4 oz. Add more as you choose. Also add more broth if desired. Bring back to simmer. Don't boil.
