1 pound tender beef, sliced 1/4 ''x 2''x 1''
1/2 cup scallions
1/4 tsp salt
1/4 tsp soy sauce
1 tsp cornstarch
dash sugar
2 Tbls oil
2 Tbls oyster sauce
1/4 cup chicken broth

1 Tbls cornstarch
1 Tbls water

Directions:
Directions:
Prepare beef. Cut scallions into 1 '' pieces, using the white part, too. In a bowl, place salt, soy sauce, 1 tsp cornstarch and sugar. Mix thoroughly, add beef. Marinate for 5 minutes. In a skillet, place oil, beef, scallions, and oyster sauce. Cook 3 minutes, then add chicken broth and 1 Tbls cornstarch that has been made into a paste with 1 Tbls water. Toss until thickened and beef and scallions are well coated. Serve over rice.
