2 egg whites
1 c. white sugar
1/3 c. water
1/2 t. cream of tartar
8 marshmallow (quartered, or 1 c. minature)
1 t. vanilla

Directions:
Directions:
Combine sugar, water and cream of tartar in a small sauce pan, and heat on medium heat, stirring until sugar dissolves and mixture starts to boil. Boil until mixture reaches 242 degrees on a candy thermometer.
While the above mixture above is cooking, beat the 2 egg whites until stiff peaks form, but not dry.
When sugar mixture reaches 242 degrees, add the quartered marshmellows. Stir until marshmellows are dissolved.
Slowly pour the marshmellow sugar mixture into the egg whites, and beat with electric mixture until stiff peaks form; 5 - 7 minutes. Add vanilla, and spread on cake layers, or 9x13" cake.
