1 pkg. beef flavored rice/vermicelle mix
1/2 med. onion chopped
1 Tbsp. margarine
1# beef sausage
1/2 c. sour cream
1 c.chopped tomoto
1 can chopped green chilies
1 c. monterey jack cheese

Directions:
Directions:
Prepare rice mix according to directions. While rice mix is simmering, saute onions in margarine, add sausage & brown slightly, set aside. Fold sausage and onions into rice mix, add sour cream. Sprinkle tomatoes & chilies on top of rice mixture. Sprinkle cheese on last. Heat until cheese is melted. Serve and enjoy!

Tim always made this for Kellee & Katie when I wasn't home. This is a favorite memory of theirs. Tim uses deer/pork sausage in his recipe. You can use bulk or ring sausage.
