1 dozen shucked oysters with juice
2 medium new potatoes, peeled and diced small
3 shallots or small onion chopped fine
1-1/2 c. light cream or whole milk
1/4 c. sliced button mushrooms (1/2 small can)
1/8 tsp. thyme
dash of paprika
salt and pepper to taste

Directions:
Directions:
Saute' shallots and potatoes in butter. Add cream and stir (do not boil), add thyme and mushrooms. Cook briefly and when tender add oysters and juice. Heat almost to boiling until oysters are done, 5 to 7 minutes. Sprinkle with paprika. Serve with oyster crackers or saltines.
