2 c. (1 pound) ground cooked chicken, turkey or ham
1 tsp. snipped parsley
1 c. thick white sauce
1 tsp. minced onion (or more)
1/2 tsp. lemon juice
1 egg
1 tbsp. water
pinch of dried sage
salt and pepper to taste
1 c. dried bread crumbs
Olive oil for frying

Mix meat, white sauce, parsley, onion, lemon juice and seasonings. After thorough mixing, chill 6 hours or overnight in covered bowl. Divide mixture into 8 equal portions. Shape into cones or balls. Beat egg with water. Place breadcrumbs in shallow dish. Roll balls in crumbs, dip in egg wash, then roll in breadcrumbs again.. Fry in hot oil until golden brown. May be shaped into patties for frying. May be served with tomato sauce or sauce made from mushroom soup.
