1 lb. Great Northern Beans or Pea Beans
2 slices bacon cut in 1 inch pieces
1 tsp. salt
1 med. onion- large dice
1/4 cup molasses
1/3 cup ketchup
1/3 cup brown sugar
3 tbsp. Gulden's Mustard
(or 1 - 2 Tbsp. dry mustard)

I soak beans 9AM - 7PM the day before I need them. At 7PM rinse beans, place in large pot with water to cover. Bring to a gentle boil and skim foam from top. Add bacon, salt, and onion and simmer covered for 40 to 60 min,Check frequently after 35 min. Beans should be soft but not mushy. Add molasses. ketchup, brown sugar, and mustard and stir gently. Add more onion if you wish. Put bean mixture,with liquid to cover in slow cooker on high for a few hours. Turn to low and cook from 9 PM-to about 10AM the next day. Turn off heat . If using for dinner that night turn cooker on high about 2 hrs. before dinnertime.

You may like more or less sugar, salt. and chili sauce can be used instead of ketchup. This was Florence Stackpole's original recipe. However, I have changed it a little. Her recipe called for salt pork. Omit the bacon/salt pork for a vegetarian dish.
