2 pounds lean ground beef
2 large eggs
2 medium cloves garlic, peeled and chopped
1 c. breadcrumbs
3/4 c. cool water
1/4 c. freshly grated parmesan cheese
1/4 c. chopped flat-leaf parsley
1 tsp. salt
1/2 tsp. freshly ground pepper
1/2 c. vegetable oil

Directions:

Using your hands, combine the meat, eggs, garlic, breadcrumbs, water, cheese, parsley, salt and pepper in a large mixing bowl, until just blended. Do not overmix or the meatballs will be tough. If the mixture feels dry to the touch add water, a tablespoon at a time, to make it moist.
Form the mixture into 2-inch balls. Preheat the oven to 325 degrees. Line baking sheet with parchment paper and set aside. Heat about 2 tablespoons vegetable oil in a large cast-iron or other heavy-bottomed skillet until very hot but not smoking. Add the meatballs without crowding the pan and cook, turning frequently, for about 3 minutes or until nicely browned all over. Lower the heat and continue cooking, turning frequently, for about 8 minutes or until the meatballs are thoroughly cooked. Placed the cooked meatballs on the prepared baking sheet in the oven to keep warm while you continue adding oil to the pan and frying until all the meatballs are cooked
