1 pound chicken livers, trimmed and rinsed
1 small onion, minced
1/2 c. diced celery
1/2 clove garlic, peeled and chopped
1/4 c. unsalted butter
1 hardboiled egg, finely chopped
2 tbsp. brandy
dash of pepper

Directions:
Directions:
In large skillet melt butter. Add livers, onion, celery, garlic and pepper. Cook over medium-low heat until livers are almost done. Remove from heat and allow to stand for 10 minutes. Add brandy and mix well. Chopped egg may be added to mixture or sprinkled over the top as garnish. Liver mixture may be chopped fine by hand or processed in a blender or food processor. Serve with crackers.
