1 c. sugar
1 stick (4 oz.) butter or margarine
3 ripe bananas, mashed with fork
2 eggs, beaten
2 c. flour
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. banana extract
1/4 tsp. salt
1 c. chopped walnuts or pecans

Directions:
Directions:
Mix butter or margarine and sugar in electric mixer until well blended. Add bananas and eggs and mix thoroughly. In medium bowl, mix flour with soda and salt. Add gradually to banana mixture until well blended. Add vanilla and banana extract. When well mixed, add nuts. Pour into greased and floured 9X5X3 loaf pan and bake at 350 degrees for about 1 hour or until toothpick inserted in center comes out clean.
