2 T butter
1/2 c onion - chopped
2 T flour
3 c chicken stock
2 bunches of fresh spinach, coarsely chopped
1 8oz container of heavy cream

Directions:
Directions:
Melt butter and add onion and saute until onions are translucent. Stir in flour using a wire whisk. When blended, add the chicken stock, stirring vigorously with a whisk. Bring to a boil. When the soup is thickened and smooth, add the spinach and cook briefly. Stir in the cream and add salt and pepper to taste.
