1 C yellow cornmeal
1 C sifted flour
4 tsp. baking powder
1/4 C sugar
1/2 teaspoon salt (optional)
1 egg
1 C milk
3 tbsp. vegetable oil

Directions:
Directions:
Preheat oven to 375. Mix together dry ingredients. Add
remaining ingredients and mix well. Bake in a loaf pan, muffin
pan, or 9" square pan (sprayed with cooking spray) for 20 to 25
minutes until golden brown.

I usually cut back on the sugar to about 1/8 c. You may also use 1/4 c. of shortening instead of the 3 tbsp. vegetable oil. (Your preference here.) I never add the salt. I think the recipe works well without it.
