Ingredients:  
1 cup onion, chopped finely
3/4 cup carrot, chopped finely
1/2 cup green onions, chopped finely
1/2 cup celery, chopped finely
2 1/2 pounds ground turkey
1 cup Italian breadcrumbs
1 tsp salt
1 tsp pepper
1/4 tsp ground nutmeg
1/4 tsp ground cumin
4 egg whites, lightly beaten

1/2 cup ketchup
3 Tbls brown sugar

Directions:
Directions:
Combine all ingredients (except ketchup and brown sugar) in a large bowl and mix thoroughly. Place mixture into loaf pan and bake at 350 for 30 minutes. Combine 1/2 cup ketchup and brown sugar and brush over turkey loaf. Bake an additional 30 minutes or until done. Let stand 10 minutes before slicing.

I usually chop all the veggies in a small food processor to save time. This is great served with white rice and peas (or corn for Orley).
