1 ripe avocado, well mashed
1 pimento, chopped
1 clove garlic, mashed
1 lg. tomato, peeled and chopped fine
Salt and pepper to taste

Directions:
Directions:
Combine all ingredients. Mix well and chill until ready to use. This can not be made to far ahead of time as the avocado will turn dark. A little lemon juice squeezed on the avocado will help to prevent this. Makes 2 cups.

This recipe was shared by a long time friend, Lu Bowen. Al and Lu were neighbors when we lived in Florella's Trailer Court. They moved to Texas and we moved into the country, but we have remained friends since 1962.
