2 c. sugar
1 c. oil
3 eggs, beaten
3 c. flour
1 t. salt
1 t. soda
2 t. vanilla
3 c. apples, peeled and chopped
1 c. nuts

Directions:
Directions:
Combine sugar, oil and eggs. Beat well. Add flour, salt and soda, and stir gently to combine. Do not over beat. Add vanilla, apples and nuts. and fold in. Pour into 2 loaf pans. Sprinkle tops with sugar. Bake at 325 degrees for about 1 hour, or until done (when a toothpick inserted into the center comes out clean).
