1 three pound fresh salmon filet, cut into 1-inch dice
Prepared dough for 2-crust pie
3 c. plus 4 tbsp. heavy cream, divided
2 c. clam juice or fish stock
4 c. water
1 pound tiny new potatoes, well scrubbed
4 tbsp. flour
4 tbsp. butter, softened
1/2 pound thick- sliced bacon, diced 1/4-inch, fried and drained, reserving bacon fat
1 large onion, peeled and chopped fine
6 stalks celery, chopped fine
4 tbsp. minced parsley
6 tbsp. chopped fresh dill
3 tbsp. fresh lemon juice
2 tbsp. lemon zest
salt and pepper to taste

In large pot bring clam juice and water to a boil. Add potatoes and cook until tender. Remove potatoes and set aside. Add diced salmon and simmer for 4 minutes. Remove and set aside. Boil water until reduced to about 1-1/2 c. Add 3 c. cream and simmer 20 minutes. In a small bowl. mix flour and butter. Whisk into hot cream and cook until thickened and smooth. In large skillet, use 6 tbsp. of reserved bacon fat to cook onion until soft. Add celery, cover and cook for 15 minutes. Add salt and pepper. Fold in salmon, potatoes, bacon and lemon juice. When mixture is heated through, spoon into 12 8-oz. ramekins or individual casseroles, adding sauce to cover ingredients. Roll pie dough and cut into small circles to cover ramekins. Brush tops of pies with 4 tbsp. cream. Bake at 375 degrees until crust is browned, 15 to 20 minutes.
