5 lbs. fresh or frozen MASA
1 cup shortening
5 tsp baking powder
salt to taste (approx. 5 tsp)
HOT water
corn husks
Gebhardt's Chili Powder
3 lbs. beef cubes
1 lb. pork cubes
1/4 cup oil
garlic and flour

Directions:
Directions:
Whip MASA and shortening till fluffy. Add baking powder, salt and very hot water and beat for 4 minutes. Soak corn husks in hot water for one hour. Change water as needed. In making the tamales, spread one spoonful of masa on husk, then spread with back of spoon. The filling goes on top of this masa. After putting on the filling, fold husk. Tamales should then be placed in a steamer, seam side down, open fold end up, covered with a kitchen towel and steamed over 2 cups boiling water for one hour.
MEAT FILLING
Cover meat with salted water, add 2 or 3 peeled whole cloves garlic, cover and simmer until tender. Remove garlic when meat is done. Then add the meat to this tamale sauce.
TAMALE SAUCE
In 1/4 cup oil, brown 8 tbsp flour. To this add 2 cups water and one 3 oz. bottle of prepared chile powder which contains all the spices and seasonings. Add Meat. Let sauce cool before spreading over masa on tamales.

Several persons getting together for this project is best, and a WHOLE LOT of FUN too!! Quite an extensive job but well worth it.
