3 c. cooked chopped chicken or turkey
1/4 c. finely chopped onion
1/3 c. butter, melted
1/3 c. flour
1/2 tsp. salt
2 c. light cream or half-and-half
2 whole eggs, lightly beaten
1/2 c. bread crumbs
dash of pepper
dash of nutmeg
oil for frying

Directions:
Directions:
Mix chopped meat with pepper, nutmeg and onion. Add flour and butter and blend until smooth. Add cream and cook slowly in large skillet until sauce is thickened. Add salt, cool and chill for one hour. Shape into croquettes, dip in beaten egg and roll in bread crumbs. Fry in hot oil at 375 degrees until browned, about 5 minutes. Serve with white sauce over noodles.
