2 cups whole wheat flour
1/4 cup wheat germ
1 tsp. salt
1 tsp. baking soda
1 & 1/2 cups mashed bananas
1/4 cup vegetable oil
1/2 cup honey
2 eggs
1 tsp. vanilla
1/2 cup choppedwalnuts (or pecans)

Grease a 9x5 inch loaf pan. Preheat oven to 350 degrees. Combine oil, honey, eggs, vanilla, and mashed bananas in a bowl. In another bowl, whisk together the flour, wheat germ, salt and baking soda. Make a well in the dry ingredients and add the banana mixture. Mix together until dry ingredients are moistened. Stir in nuts. Pour batter into prepared pan. Bake 1 hour in preheated oven. Test for doneness and cool on a wire rack.

I don't think a quick bread can be any healthier or tastier than this. I make this quite often for breakfast. Moist and crunchy .
