3-1/2 pound chicken, cut up
1/4 pound salt pork, diced
4 medium onions, sliced thin
2 tbsp. flour
1 clove garlic, minced
12 oz. warm beer
2 tbsp. cider vinegar
1/2 tsp. marjoram
1/2 tsp. pepper
1/2 tsp. thyme
1 tsp salt
1 tsp. sugar

Cook salt pork in a 4 quart saucepan or dutch oven for 10 minutes or until crisp. Remove to paper towels and set aside. In pork fat saute chicken until brown (15 min.) and remove to paper towels. In remaining pork fat cook onions 10 minutes until translucent. Discard excess fat. Add flour, marjoram, pepper, thyme, salt and garlic. Stir in beer. Cook over high heat stirring constantly, 5 minutes or until sauce thickens. Stir in vinegar. Place chicken in sauce and sprinkle with salt pork bits. Bake, covered, 1 hour in 350 degree oven.. Serve with sauce.
