2 pounds potatoes (6 medium), red or white
4 tbsp. butter or margarine, divided
3 tbsp. flour
2-1/2 c. milk (2% or whole)
1/4 to 1/2 c. minced onion (1 small to medium)
1-1/2 cooked cubed lean ham (optional)
salt and pepper to taste

Heat oven to 350 degrees. Wash and peel potatoes and slice thinly. You will need about 4 cups. Melt butter or margarine in saucepan over low flame. Blend in flour and seasonings. Cook and stir until smooth and bubbly and flour is cooked. Remove from heat and stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute. In a greased 2 quart casserole dish arrange potatoes in two layers. First add a layer of sauce, then add 1/2 the potatoes. Top with 1/2 the onion, then the ham cubes (if desired) and 1/3 of the sauce. Finish with the rest of the potatoes, onion, and sauce. Dot with 1 tbsp. butter or margarine. Bake for 30 minutes covered, then remove cover and bake for 60 to 70 minutes. more. Let stand for 10 minutes before serving.
