2 1/2 cups diced boiled potatoes
1 1/2 cups cubed ham
1 cup shredded cheddar cheese
1 cup sour cream
2 beaten eggs
3 tbsp sliced green onion
1 tsp seasoned salt
2 tbsp parmesan cheese
green onion slices for garnish

Directions:
Directions:
Arrange diced boiled potatoes and ham cubes in a shallow buttered casserole. Stir together cheese, sour cream, eggs, green onion and seasoned salt. Pour mixture over ham and potatoes. Sprinkle with parmesan cheese.

Bake at 350 degrees for 30 minutes or until set. Sprinkle green onion slices on top before serving.

This recipe is easy to double. Use any leftover meat you want to get rid of like turkey would be good also! Good served with green salad and hot bread.
