10 red potatoes
1/2 red onion, diced
1/2 cup parsley flakes
2 sticks butter, margarine
1 tbsp EVOO
salt/pepper to taste

Directions:
Directions:
Scrub and dice potatoes (skin on) and onions into bite size pieces. Preheat oven to 350 and grease a 13x9x2" pan with EVOO. Add potatoes, onion, and parsley and mix well. Cut butter into pats and spread evenly over potatoes. Bake covered with foil for 45-50 minutes or until potatoes are soft.
