Chicken and Sausage Gumbo Recipe

1/3 c. flour
1/4 c. cooking oil
1/2 c. chopped onion
1/3 c. chopped green pepper
1/4 t. black pepper
1/4 t. ground red pepper
garlic salt to taste
garlic powder to taste
3 c. chicken broth (heated)
8 oz. sausage, quartered lengthwise and cut into slices
1 whole large chicken breast, skinned, boned and cut into bite size pieces
2 cups hot cooked rice

For roux, in a heavy saurcepan, combine flour and oil till smooth. Cook over medium-high heat for 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir about 15 minutes more till roux is dark reddish brown.

Stir in onion, green pepper, black pepper, red pepper, garlic salt and garlic powder. Cook over medium heat 3 to 5 minutes or till vegetables are just crisp-tender, stirring often.

Gradually stir in hot chicken broth, sausage and chicken. Bring to boiling, reduce heat. Cover and simmer 20 to 30 minutes or till tender.

Serve over rice
