4 Russet potatoes, baked
cup finely shredded cheddar cheese
cup finely shredded swiss cheese
1/8 tsp red pepper
1/8 tsp paprika
4 slices crispy fried bacon, crumbled
cup sliced green onions
1 cup sour cream

Directions:
Directions:
Preheat broiler. Cut potatoes lengthwise into quarters. Scoop out of the pulp; save for mashed potatos later or whatever you like. Place potatoes on broiler pan or baking sheet. Broil 4 inches from heat source for 8 minutes or until golden. Sprinkle potatoes with cheddar, swiss, red pepper, paprika, bacon and green onion. Broil for 3 minutes or until cheese bubbles. Serve hot with sour cream for dipping.

Good with onion soup. To make a little spicier, add 1 tbsp salsa to each potato half. Save time by baking potatoes in the microwave.
