3 T. olive oil
3 cloves garlic, minced
1 1/2 lbs. hot or sweet sausage, cut into 1" pieces
l large green or yellow bell pepper, cut into strips
1 large onion, sliced
1 - 14oz. can tomatoes, diced, juice reserved
1 T. dried basil, crumbled
1 T. dried oregano, crumbled
1 c. red wine
salt & peper
1 lb. penne pasta, freshly cooked
grated parmesan cheese

Heat oil in a heavy large skillet over medium heat. Add garlic and saute until golden, about 1 minute. Mix in sausage and cook until brown, about 8 minutes. Add peppers and onion, cook until almost tender, stirring occasionally, about 5 minutes. Mix in tomatoes with juices, basil, oregano & wine. Season with salt & pepper. Cover and simmer for 8 minutes. Uncover and cook 2 minutes. Pour over pasta & toss. Serve, passing parmesan cheese separately.
