2 1/2 c. sugar
4 c. flour
4 tsp. cinnamon
4 tsp. baking soda
1 tsp. salt
1 c. plumped and drained raisins
1 c. coconut
4 c. shredded carrots
2 shredded apples
1 c. pecans
6 eggs
2 c. vegetable oil
1 tsp. vanilla

Directions:
Directions:
Sift dry ingredients into a very large bowl. Lightly dust raisins with flour (they won't sink). Add the coconut, fruit, and nuts. Mix well. Add eggs, oil and vanilla stirring until combined. Spoon the batter into cupcake tins. Bake at 375F for 20 minutes. Ripen at least 24 hours.
