"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
2 1/2 c. sugar 4 c. flour 4 tsp. cinnamon 4 tsp. baking soda 1 tsp. salt 1 c. plumped and drained raisins 1 c. coconut 4 c. shredded carrots 2 shredded apples 1 c. pecans 6 eggs 2 c. vegetable oil 1 tsp. vanilla
Sift dry ingredients into a very large bowl. Lightly dust raisins with flour (they won't sink). Add the coconut, fruit, and nuts. Mix well. Add eggs, oil and vanilla stirring until combined. Spoon the batter into cupcake tins. Bake at 375ºF for 20 minutes. Ripen at least 24 hours.
From the Morning Glory Cafe in Nantucket. Extra yummy. Family brunch favorite.
