In large mixing bowl:
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt.

Add:
1 c. oil
1/2 c. chopped nuts
1 tsp. vanilla
1 1/2 c. sugar
2 c. grated carrots
1/2 to 1 c. raisins
1/2 c. coconut
3 eggs

Directions:

Mix well. Pour into pans. Let stand 20 minutes. Bake at 350 F for one hour.
