1-1/2 pounds top round or flank steak thinly sliced across the grain (may be partly frozen for easier slicing)
1 tbsp. cornstarch
1 tbsp. plus 1 tsp, soy sauce, divided
5 tbsp. peanut oil
3 c. chopped leeks, well washed and drained
1 tsp. dry sherry
1 clove minced garlic
1/4 c. water
1/2 tsp. sugar

Directions:
Directions:
Mix cornstarch and 1 tsp. of the soy sauce with the water. Place in large mixing bowl with beef, turning to coat slices. Heat 2 tbsp. of the oil in wok or large skillet and stir fry leeks for 3 minutes. Add remaining tbsp. soy sauce, sherry and sugar. Continue cooking until leeks are crisp-tender. Transfer leeks to heated plate and keep warm. Heat remaining 3 tbsp. oil in wok and stir-fry beef over medium heat until slices change color, about 2 minutes. Add reserved leeks and stir-fry another 1 or 2 minutes. A handful of snow peas and bean sprouts may be added the last 2 minutes of cooking time. Serve over cooked white rice at once.
