1 whole frying chicken or broiler
1 tsp. salt
1 clove garlic
3 to 4 tbsp butter
Juice of 1 or 2 lemons
1 tsp. oregano, divided

Directions:
Directions:
Wash chicken and pat dry. Rub inside of chicken with salt and 1/2 tsp. oregano. Place clove of garlic inside body cavity. Melt butter in roasting pan. Add chicken, breast down, to pan and roast for 30 minutes at 400 degrees. Turn chicken and continue roasting for another 30 minutes. Reduce heat to 300 degrees and cook for about 30 minutes longer. During the last 15 minutes of cooking baste chicken with lemon juice and remaining 1/2 tsp. oregano. Remove drippings from pan and add water for sauce to pour over rice, etc. Remove excess chicken fat if desired.
