1/4 C. butter softened
1/2 c. sugar
1 egg
1 c. (8oz) sour cream
1 1/2 t. rum extract
1 1/2 c. all purpose flour
1 t. baking powder
1/2 t. salt
1 can crushed pineapple drained (8oz)
1/2 c. flaked coconut
1/3 c. chopped pecans

Cream butter and sugar. Add egg, sour cream & extract. Mix well. Combine flour, baking powder, baking soda and salt. Stir into creamed mixture until just moistened. Fold in coconut and pecans. Fill greased or paper lined muffin cups 2/3 full.
Bake 375 for 20 - 25 minutes until toothpick comes out clean.
