"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
Juice and rind of 4 oranges 3 cups sugar 3 eggs 1 cup water 3 Tbsp butter 3 Tbsp flour
Using a zester or grater, grate the rind from the oranges all the way down to the white membrane. Peel off the white membrane and crush oranges in a blender. Add orange zest and crushed oranges together and set aside.
Mix flour and sugar. Stir in eggs. Add water, orange zest and crushed oranges. Drop butter on top. Cook over boiling water, stirring until mixture thickens. When ready it should be thickened jelly-like consistency. Spread between layers and on sides and top.
