1 c. raw or unsalted peanuts
1. c sugar
1/2 c. white karo syrup
1/8 tsp. salt
1 T. margarine
1 tsp. vanilla
1 tsp. baking soda

Directions:
Directions:
Mix the first 4 ingredients and microwave for 4 minutes. Stir well. Microwave for 4 more minutes.

Add the 1 T. margarine and 1 tsp. vanilla and microwave for 1 minute. Add 1 tsp. baking soda and beat until frothy. Spread onto a baking sheet sprayed with cooking spray. Let cool and break into pieces.

This is the fastest and easiest peanut brittle I have ever made and it has always turned out wonderful. Everyone at Christmas just loves it!
