Molasses Crinkles:
3/4 cup shortening or butter
1 cup brown sugar
1 egg
1/4 cup molasses
2 1/4 cups flour
2 tspn baking soda
1/4 tspn salt
1/2 tspn ground cloves
1 tspn cinnamon
1 tspn ground ginger

Scotch Shortbread:
1 cup soft butter
5/8 cup sugar (1/2 cup plus 2 tbsp)
2 1/2 cups flour

Russian Tea Cakes:
1 cup soft butter
1/2 cup sifted confectioners sugar
1 tspn vanilla
2 1/4 cups flour
1/4 tspn salt
3/4 cup finely chopped nuts

Chocolate Chip Peanut Butter Cookies:
1/2 cup soft shortening (half butter)
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/4 cup flour
1/2 tspn baking powder
3/4 tspn baking soda
1/4 tspn salt
1 cup (6 oz.) semi-sweet chocolate chips

Gingerbread Things:
1 cup shortening
2/3 cup sugar
1 cup dark molasses
5 cups flour
1 tspn baking soda
1 tspn salt
1 tspn ground nutmeg
3 tspn ground ginger

Molasses Crinkles:
Mix together thoroughly shortening, sugar, egg and molasses. Sift together and stir in all other ingredients. Chill dough. Roll into balls the size of large walnuts. Dip tops in sugar. Place, sugared side up, 3" apart on greased baking sheet. Sprinkle each cookie with 2 or 3 drops of water to produce a crackled surface. Bake at 375º F for 10-12 minutes, just until set but not hard. Makes about 4 dozen cookies.

Scotch Shortbread:
Mix thoroughly all ingredients with hands. Chill dough. Roll out to 1/3" to 1/2" thick. Cut into fancy shapes. Flute edges if desired by pinching between fingers as for pie crust. Place on ungreased baking sheet. Bake at 300º F for 20-25 minutes (the tops do not brown during baking, nor does the shape of the cookies change). Makes about 3 dozen cookies.

Russian Tea Cakes:
Mix together thoroughly butter, sugar and vanilla. Sift together and stir in all other ingredients. Chill dough. Roll into 1" balls. Place 2 1/2" apart on ungreased baking sheet. Bake at 400º F for 10-12 minutes until set, but not brown. While still warm, roll in confectioners sugar. Cool. Makes about 4 dozen cookies.

Chocolate Chip Peanut Butter Cookies:
Mix together thoroughly shortening, peanut butter, sugars and eg. Sift together and stir in all other ingredients. Chill dough. Roll into balls size of large walnuts. Place 3" apart on lightly greased baking sheet. Flatten with fork dipped in flour... criss-cross. Bake at 375º F for 10-12 minutes until set, but not hard. Makes about 3 dozen cookies. Uncle Mike says if you can't make these, get out of the kitchen.

Gingerbread Things:
Melt shortening in a saucepan. Add in sugar, molasses and stir well; set aside to cool 10 minutes. Sift together the flour, soda, salt and spices in a bowl. Gradually stir flour mixture into molasses mixture to blend well. Mix with your hands toward the end if necessary - dough will be very thick. On floured board, roll out to 1/4" thick. Use cookie cutters, or a knife to cut out designs of your own making. Place slightly apart on a lightly greased baking sheet. Bake at 350º F for about 5-12 minutes, depending on cookie thickness and cookie just starts to puff up, but do not burn. Decorate as you see fit. Makes about 3 dozen cookies.
