Boil potatoes until done. Peel & cube potatoes. Cut bacon into small pieces and fry with chopped onion till done. Save 1/2 the bacon grease. Mix bacon, grease & onion with cubed potatoes. Mix mayonnaise & cubed velveeta with potato mixture. Put in a casserole dish. Bake at 350 for 50 - 60 minutes.
