This is a letter that I copes word-for-wword from a letter that Mother has that was sent to Uncle Bud's wife, Katherine. I don't know how Mom happens to have it. I have not made it yet, but intended to as aoon as I retire.

Dear Folks,

Just finished dinner & got all the dishes washed, & I am really tired, so I thought I would write a few lines before taking a bath.

August just went to town to get writing material, we are fresh out, all but this.

Well Kate I made bread this morning & some peach kuchen & some pecan rolls, but instead of pecans I used black walnuts & they are really good.

I set my sponge last night right before I went to bed, cooked on medium sized potato, mashed it & used the water & all that I boiled it in, then crumbled my yeast in it. Used Fleischmann's yeast & put flour in it just enough so you can stir it good, then put it to rise during the night & this morning we got up at 5 o'clock to go to six o'clock mass & it had run all over my crock, so I had a mess when we got home. Don't put it in too small a containerr like I did & have it go all over. When we came from Church I took some of that sponge & made bread & the rest coffee cake & rolls.

The bread I just put salt, about 3 or 4 tbsp. of shortening, I guess I used about a quart of skimmed milk (lukewarm) & enough flour to make a stiff dough so you can knead it on the bread board, they you have to let it rise again & then put it into loaves & let rise again before putting it in the oven. I made 4 loaves & used one cake of yeast.

I used half of my sponge for bread & the other half I make my coffee cake & rolls. In the rolls I put 2 eggs, salt & a little sugar & about 1/2 cup shortening & some milk, it all depends on how many you want to make. I made 4 peach kuchen & a good sized pan of rolls. It is not too particular about the milk & sugar, just don't get the milk too hot cause that kills the yeast.
