2/3 Cup Butter, Softened
1 1/3 C Brown Sugar, Packed
3/4 teaspoon Salt
3/4 teaspoon Baking Soda
1 1/4 teaspoon Baking Powder
3 Tablespoons Cinnamon
3 Eggs
2 3/4 + Cup All-Purpose Flour
1 Cup Shredded Carrots
1 ½ Cup Nuts, Chopped (optional)

Bake at 350º F
Bake for 14-16Minutes
Avg. 48-60 Cookies

*In a bowl mix flour, salt, baking soda, baking powder, salt and cinnamon.
*In a large cream butter, white sugar and brown sugar till light and fluffy.
*Add in carrots and add in dry ingredients.
*Need to be able touch with fingers and not be to sticky as to leave dough on fingers. *May need to add more flour.
*Add in nuts, (optional)
*Drop by small ice cream scoops/ teaspoon size.
*Cool on a cooling rack.

*Frost with cream cheese frosting or brown butter frosting.
