18 oz. package lemon cake mix
1¼ c. Cool Whip, thawed
2 eggs
Powdered sugar, for dusting

Directions:

Whisk the cake mix, Cool Whip and eggs.
Place parchment paper on two cookie sheets.
Scoop about two tablespoons of batter for each cookie leaving one inch around for them to spread. You may need to use an extra spoon to release the batter as it gets sticky.
Using a fine wire strainer, lightly dust the batter with powdered sugar.
Bake until the cookies are crackled and lightly golden brown around the edges, about 6-8 minutes at 350º.
Cookies will be delicate.
