- 8 Tbs salted butter
- ½ cup white sugar (can use raw cane sugar)
- 1/4 cup packed light brown sugar
- 1 tsp vanilla
- 1 egg
- 1 ½ cup all-purpose flour
- ½ tsp baking soda
- ¼, or a bit more, salt
- ¾ cups chocolate chips (can mix chocolate chips and chocolate chunks)

Preheat oven to 350 degrees. Microwave butter for 40 seconds to just barely melt. It doesn’t need to be hot but should be almost liquid in form. Using mixer, beat butter and sugars until creamy. Add vanilla and egg, beating on slow speed for about 10-15 seconds…Don’t beat too long! Add flour, baking soda and salt. Mix until crumble forms. Use your hands ti press crumbles together into a dough. Form one large ball that is easy to handle (at stage between wet dough and dry dough). Add chocolate chips and incorporate them with your hands into the dough ball. Roll the dough into 12 large balls. Place on cookie sheet. Bake for 9-11 minutes until; the cookies look puffy and dry, just barely golden. DO not overbake! Let them cool for 30 minutes.
