3 tbsp oil
2 eggs, beaten
1/2 diced ham or pork
1/2 c thin sliced green onions
1/4 c finely chopped mushrooms
4 c cooked rice, chilled
3 tbsp soy sauce

Directions:
Directions:
In lg skillet, heat 1 tbsp oil. Add beaten eggs and cook, without stirring, until set. Invert skillet over baking sheet to remove cooked eggs. Cut them into short, narrow strips. In same skillet, heat remaining oil. Add meat, mushrooms, and onions and cook for 4 minutes. Stir in cooked rice and egg strips; sprinkle with soy sauce. Heat through, tossing gently to coat with soy sauce.
