1 lb. Hydrox cookies (save out 12 for top crust)
1/3 c. butter, melted
1 pint whipping cream
2 c. minature colored marshmellows
1 c. after-dinner mints (pastel colored)

Directions:
Directions:
Crush Hydrox cookies (except for 12 reserved for top crust). Mix cookie crumbs with 1/3 c. melted butter. Press into 9 x 13 pan. Chill.
Whip 1 pt. whipping cream. Fold in 2 c. min. colored marshmellows and 1 c. after-dinner mints. Spread whipping cream mixture over chilled cookie crumbs.
Crush 12 remaining cookies and put over top. Place in refrigerator for 2 days and then freeze. This will allow the mints to soften. Serve frozen or soft.

I prefer to serve this dessert not frozen. It is a very pretty dessert for Easter.
