One pound (12-16 large) mushrooms
8 tbsp. (one stick) butter
1/4 c. minced onion
1 c. finely diced cooked ham
1/4 c. minced parsley
1 c. bread crumbs
1 egg lightly beaten
pepper to taste

Rinse, pat dry and remove stems from mushrooms. Finely chop stems. In a large skillet melt 4 tbsp. butter and dip mushrooms caps in it. Set skillet with remaining butter aside. Arrange caps in well-buttered 8-in. square baking dish. Add 3 tbsp. butter to skillet and heat. Add chopped stems and onion. Cook quickly, stirring several times for a few minutes. Stir in ham, 3/4 c. of the bread crumbs, parsley, and pepper.; remove from heat and stir in the beaten egg. Fill mushroom caps with the ham mixture. Melt remaining butter and stir in remaining 1/4 cup bread crumbs. Sprinkle over mushrooms. Bake at 425 degrees 20 to 25 minutes.
