1 cup sugar
1/3 cup corn syrup
1/4 cream tartar
1 teaspoon cotton candy or peppermint flavoring
Red Food Coloring or favorite color

1. Prepare an upside down cookie sheet. The air underneath
cools candy faster). Cover with parchment paper and spray
with oil.

2. In a non-stick enamel pan, over medium heat stir together
sugar, corn syrup, water and cream of tartar with a wooden
spoon until the sugar crystals dissolve.

3. Continue to stir, using a pastry brush dampened with warm
water to dissolve any sugar crystals on sides of pan.

4.Place the candy thermometer in the pan. Do not touch sides
or bottom and let the syrup boil without stirring until the
temperature reaches 300 degrees. (Hard Crack Stage)

5. Remove the pan from heat immediately and let the syrup
cool to about 275 degrees before adding flavoring and food
coloring.

6. Pour the syrup quickly onto the greased cookie sheet into
small circles (2 inches) onto the cookie sheet and place a
lollipop stick in each one, twisting the stick to be sure its
covered with candy.

7. Let the lollipops cool for at least 10 minutes. Wrap
individually in cellophane and seal with ribbon or twist ties.
Serve as party favors and enjoy!

Buy candy flavorings on-line. May substitute pepermint to
cotton candy, strawberry, lemon, etc. Syrup gets very HOT!
Must have parental supervison while making candy.
