2 lbs. ground beef or ground turkey
2 lg onions
1 can (8oz) tomato sauce
1 jar (16oz) thick and chunky salsa
1 tsp. each: cumin, chili powder, and garlic powder
1 can (17oz) creamed corn
1 can kidney beans (optional)
12 corn tortillas, cut into 1 inch strips
2 oz. grated, part skim mozzarella cheese
2 oz. grated, low fat cheddar cheese

Preheat oven to 350. Spray a large skillet. Brown meat with onion. Add sauces, seasonings and corn. Mix well. Spray a 9x12 pan. Layer mixture with tortillas, starting with 1/4 of the meat mixture and topping with 1/3 of the tortilla strips. Continue layering, ending with the meat mixture. Cover and bake for 35-40 minutes or until thoroughly heated. Add cheese and cook another 5 minutes.
