Soft tortillas
4 boneless chicken breasts
Longhorn cheese, shredded
2 Tbsp. olive oil
1/2 cup chopped onion
1 clove garlic
2 tsp. to 1 Tbsp. chili powder
1 cup tomato puree
1/2 cup chicken stock
1 tsp. cumin
Salt and pepper to taste

Boil chicken and cut up into pieces, the smaller the better. Heat remaining ingredients in saucepan. In tortilla shells, roll approx 1 Tbsp. chicken, shredded longhorn cheese, and spoonful of sauce.
Place in greased baking dish seam side down.
Pour extra sauce and cheese on top
Bake 350 for approx 15 minutes.
