2 med. zucchini
3 T. onion, chopped
1 slice bacon, chopped
1/2 cup fresh mushrooms, sliced or 4 oz canned (optional)
1/2 cup tomato, chopped
1/4 cup chicken broth
1/2 t. thyme
1/2 t. pepper
1 cup seasoned bread crumbs

Directions:
Directions:
Steam zucchinin 15 minutes. Slice length wise, remove pulp and reserve. Fry onion and bacon until onion is translucent. Add mushrooms, tomato and reserved pulp. Cook 5 minutes, stirring occasionally. Add broth and seasonings; bring to a boil. Add bread crumbs and remove from heat. Fill zucchini shells with mixture. Bake at 350 degrees for 25 minutes.
