2 1/4 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1 2/3 c. sugar
1 c. milk
1 stick softened butter
2 tsp. vanilla
3 egg whites
1 c. crushed chocolate sandwich cookies about 10 cookies
1 container vanilla frosting

Preheat oven to 350º; lightly grease 24 standard muffin pan cups / line w/ paper baking cups.
Sift flour, baking powder, and salt together in lg. bowl.
Stir sugar. Add milk, butter, and vanilla; beat at med. speed 2 mins.
Add egg whites; beat 2 mins. Stir in 1 c. crushed cookies.
Spoon batter evenly into muffin cups, filling 2/3 full.
Bake 20-25 mins, cool in pans on wire racks 10 mins.
Once cool frost cupcakes and garnish w/ additional crushed cookies.
